3 years of ignoring my blog.

How does it happen? One minute you are blogging on a daily basis and the next thing you know, 3 years have passed. I never even noticed the blog was missing. It seemed like only yesterday, I was happily keyboard blogging, than there was a short face book phase, a MySpace investigation, and a twitter fling with the blog nowhere to be found. I like a blog, it feels natural, easy and slower pace than the passing fads of the social networking sites. I don't want to be "in touch" with other humans all the time. I need my alone time, some space on the net to call my own. To me, this little blog is like taking time to smell the roses, laying in a hammock under the shade of an old oak tree or meandering by a lovely meadow stream. Although I don't know how, nor have ever meandered, it does sound lovely. With that said, here I am, three years later taking time to smell the roses, lay in a hammock and meander, without the prying eyes of face book, MySpace, or twitter. Care to join me?

Rice and Cheese Casserols

Rice and Cheese
1 cup milk
1 1/2 cup grated cheddar cheese
1/2 teaspoons Worcestershire sauce
1 Tablespoons butter
1/4 teaspoons salt
1/8 teaspoons pepper
3 cups cooked rice
Combine milk and cheese in pan until melted - add the rest, but not rice. Add cooked rice - mix lightly. Bake in greased baking dish, top with remaining cheese at 375 degrees for 15 minutes until brown.

Baked Potato Surprise

Baked Potato Surprise

4 or 5 medium sized potatoes
butter, to taste
salt, pepper
milk
slice of cheese or bread crumbs

Bake potatoes until tender. Then cut a slice of skin off the flat side of each potato and scoop out inside of each. Mash potato, adding butter, salt and pepper and milk and whip to the consistency of mashed potatoes. Fill the potato shells with mixture and top with thin slices of cheese or layer of bread crumbs. Place back in oven in baked pan until browned.
Perfect with porkchops.

Apricot Upside Down Cake

Apricot Upside Down Cake

Melt 1 fourth cup of butter in skillet. Add 1 1/2 cups brown sugar. When all is melted add fruit. Pour a batter, made as follows, over the fruit mixture: 3 eggs, 1 cup granulated sugar, 4 tablespoons water, 1 cup flour, 1 to 2 teaspoons baking powder, 1 to 2 teaspoons salt. Beat egg yolks, add sugar and water. Sift dry ingredients and add to mixture. Fold in stiffly beaten egg whites, and bake in moderate oven.

Cucumber Lime Mold

Cucumber Lime Mold

1 three ounce packages lime gelatin
3/4 cup hot water
2 three ounces packages cream cheese, softened
1 cup salad dressing
1 teaspoon horseradish
1/4 teaspoon salt
2 Tablespoons lemon juice
3/4 cup diced cucumber
1/2 cup minced onions
Dissolve gelatin in hot water. Add cheese, salad dressing, horseradish and salt. Beat with rotary beater until smooth. Blend in lemon juice. Chill until like unbeaten egg whites. Stir in cucumbers and onions. Pour into 3 cups mold or into individual molds. Chill till set. Unmold on salad greens.
